Group executive chef Paul Farag is overseeing the two-metre-long charcoal grill, where skewers are adorned with quail and pork jowl tsukune (a seasoned meatball); chicken thigh; and wagyu. Drink-friendly bites continue with scallop and bug sandos with pickled cabbage and mayo; and kingfish with umeboshi and yuzu koshō dressing.
